Swap Parsnips for potatoes

Make “french fries”from parsnips, a root veggie thats high in fiber and folate.  Peel 2 lbs. parsnips, and cut into strips.  Toss

with 2 tbsp. olive oil, 1/2 tsp salt, and 1/4 tsp. pepper.  Place on a baking sheet, and bake 10 minutes at 450. flip, and roast 10

minutes more.  Enjoy!
